I wonder if it could be possible for GOG.com to give an idea of the maximum resolution of their games? Some seem hardwired to a very low res and some seem to be able to run at the native res of my not-too-small LCD monitor.

Hmm, not a bad idea. A good way of guessing would be to look at the screen shots. If the game is 2D it's almost certainly fixed resolution (without hacks or mods)
