How do I point my GOG Games to use a single Installation of DOSBOX.

Select your DOSBox directory.
The problem is that the installer often (always?) only recognises the same DOSBox version that itself installs, so if you have a newer or older DOSBox installed, it won't be accepted. Different games also come with different versions of DOSBox, so you'll have to figure out the order in which to install the games, as well as installing the correct version of DOSBox before trying to install each game (overwriting the earlier DOSBox version).

What I do is copy over DOSBox's 0.74 .exe with the 0.72 temporarily, then paste it back over when the game's installing.
Curious...I always use whatever DosBox is included with the GOG I happen to be playing. My GOGs seem to work fine with the DosBoxes they're linked to. Is there a significant difference to warrant changing DosBoxes?

The newest version is always the recommended version to use. I'm not sure of the specific things that make 0.74 better than 0.73/0.72, but Qbix has said previously that 0.74 is recommended.

At this point it tends to be fairly stable, but in the near future they'll be including emulation support for the old 3DFX chips, and some games might end up requiring that. At the moment they seem to use the most recent version and not update the older ones once they're stable.

The main concern would be if the folks at dosbox for one reason or another needed to break compatibility in something that the game uses.
