I'm giving this a go. I have a Vodafone 845 (Huawei 8120) which has 2.1 natively. I rooted and flashed version of Cyanogen Mod 7.1.

The rom works okay (as far as I can tell) though camera, wi-fi and a few bits aren't.

My question is: Is there a way to backup the apps that you have installed, contacts, SMS/call history etc... to have this available once the custom ROM is installed? Basically so that everything is same as before except I have Gingerbread installed.

Any help would be appreciated.

Have you had a look at the xda developer website? It's the place to go for hacking your phone/roms/etc. Their forums are located HERE

Indeed, I've been using it for a while now. It's by far the best back up utility for rooted phones.
