So is it actually possible to rob a gas station unarmed, just by saying "Give me all the money in the register"? Or did that only work because the cop was right there?

Since common training is something like "assume the robber is armed, and comply", yeah, pretty much. (Store owners and their insurers don't want their clerks getting hurt or killed playing hero over the few dollars in the till.)
