Ugh...too vague considering the number of racing games from the nineties but look up Test Drive, Ridge Racer or Big Red Racing.

wojtek858: 5. Motocross - in the centers of maps were balloons, that popped when you drove over them. You could change your helmet and suit color. On one map (2nd? winter track?) there was very high drop off, so you flied pretty far.
Oh, and there was a minimap, that almost allowed not to look on the center of the screen - you could just watch it instead. There were checkpoints so you didn't have to keep track.
I couldn't even begin to guess at this one.

I can add that in jets game we could choose a mission to play from table of single images with scenery of map. Some were blocked at the beginning.
I was quite sure the jet game you were asking for was 'After Burner 3D'... but when I've tried to find that game in the MobyGames database I've discovered such a title has never existed. Which is really weird, because I'm sure I played it some years ago. Searching a bit more, though, I've discovered a kind of After Burner spin-off called Sky Target, sometimes referred to as Sky Target 3D. That's the game I played, and I'm quite sure it's the same you were looking for. It is quite difficult to find official information about the PC version, and if you try it yourself you'll come up mainly with abandonware sites, which for obvious reason I won't link to here.

I've never been much into racing games, either cars, motorcycles, quads or whatever, so sadly I have not even the slightest hint about what can be the name of the ones you were lookig for...
The cars game isn't NFS: Porsche Unleashed is it? (There's one track that's semi-deserty that you can hit boxes on...)
