Demo here.

(f yeah!)
Is it in English?
From what I read, yeah it's been localized in English and German.
from what I've read on some other forum it's part of chapter 3 so I think I'll pass . I've download demo anyway since it's multi and also contain italian subs so I'll now buy german version and change localized pack data with this.
It looks good. The voice acting seems good enough. But not exactly an instabuy game for me. It seems very dry and slow and I don't know if it's just the demo, but there's no real sense of direction. You're wandering around aimlessly for a while until you find something you can finally have some worthwhile interaction with.

The German version contains the English version, both subtitles and voice so you won't even need to do that unless of course you want Italian subs.

Well it's an adventure game... it's king to be expected.

But actually in Gray Matter you don't really have any possibility to become "lost" or wander around, you have an "objectives" screen telling you what to do to reach the next chapter and your completion rate, you even have a tutorial and bonus objective which is kind of weird in an adventure game...

If I was to compare GM to another adventure game it would be Perry Rodhan, it's approximately the same difficulty level (which means harder than Telltales or other casual/easy adventure games, but much easier than Vampyre Story or more "hardcore"/older adventure games) it's also approximately the same length : 10 hours or so when spending plenty of time exploring and hunting bonus points.

Usually you have some sense of purpose from the start though. But then I suppose that's the problem with the demo dropping you into chapter 3. So it's nice to know that the game has very clearly established objectives. That should help no end.

I just checked the demo and actually it's not chapter 3 it's chapter one (would have been weird to drop you in chapter 3 for "some" reasons).

Are you referring to the rabbit tutorial bit? Only it jumps from that to what appears to be chapter 3.

Well my bad, I didn't play past the tutorial... after it's indeed chapter 3, most of it at least they removed some puzzles.

Don't know why they chose chapter 3 though, maybe it's because chapter 3 is a pretty short one.
