I take it you already know about these ones? (Personally, I can't recommend Prophet and excrucio eternum enough.)
Also, as others have pointed out, your collection, though betraying a refined taste in RPGs, is sorely missing Planescape Torment! But I'd totally buy Legend of Grimrock, too, if I was able to run it on my rig. Lands of Lore: The Throne of Chaos is another great tile-based dungeon crawler, and if you liked Arx Fatalis, you might be interested in Ultima Underworlds. Other than that, I'd suggest The Witcher, Ultima VII, Arcanum, or, if you don't mind it to be an Action RPG, Divine Divinity and Nox. Betrayal at Krondor is supposed to be very lengthy and immersive, too, but I haven't played it yet.

Ultima Underworld does sound nice, but how accessible is it? I don't mind the graphics, but are the controls good?
I wrote a blog post about him on my site as I love giving him page views, and he's hilarious to listen to. Plus, after you listen to his first couple of minutes of his first video on Grimrock, you'll be RUSHING to buy it as he's just so darned excited about the game, LOL.

And btw, Legend of Grimrock is next on my list when I clear some of MY backlog :) I've heard amazing things about this game so I'd say, if you can afford it, grab it (then don't KILL me when it goes on sale :)
