I notice quite often that there are "updates" to games in my library here on GOG but that when I open up that game on the shelf it doesn't seem as if anything is different? Sometimes it will have the "new" tag next to something but more often than not it doesn't. Today it has happened with the game Grey Matter. It says it was "updated" so I open it up in the library and find that this time the "new" tag is next to all the installers... Sooo, does this mean the game had a patch/update? Do I really need to reinstall all 6 installers for it to get this update? If it is a patch it seems more beneficial to just make a link to the patch than to completely reinstall a game. Anyway, if anyone can tell me anything about this strangeness I'd appreciate it lol.

It means the game has been updated in one way or another. To find out what has changed you should visit the forum for that game, GOG post updates there. You will have to redownload and install again unless there is a separate patch file.

It's usually best checking the game forum, sometimes it's not worth your time to download.

If a "new" tag appears next to an installer, then yes; the installer has been updated and you'll need to redownload it. Sometimes, GOG will instead offer a patch instead of an installer.
Edit: You mention about the game having 6 installers. Do you mean the .exe part of the installer alongside the .bin ones?

If nothing is marked as new then something was added or changed in the extras (soundtrack, wallpapers, etc.)

If only an update is marked as new then download the update and execute it. It will update your installed game to the latest version.

If there is only a new installer then you will have to download the full installer (yes, that means all files), uninstall the game and install from the new installer to get the latest version.

If you want to find out whether downloading the latest version pays off or not visit the game forum to look for the announcement of the update to find out what the update changes. In case of today's Gray Matter update they only added a few more languages. See the announcement here.

If you are not interested in the additional languages you do not need to re-download Gray Matter at this time.
