Stalker Call of Pripyat and Fallout New Vegas seem like fairly obvious choices. Perhaps too obvious. But still, choices all the same.

Oops, missed out Alan Wake on the original list! Not really interested in MGS or Halo, but Starcraft and Demon's Souls definitely make the list!

Yeah, Fallout New Vegas is an obvious one, but is there a boxed PC version available yet? As it's a Birthday present, family would want something they can physically give me!

S.T.A.L.K.E.R. Radioactive Edition which contains Clear Sky and Call of Pripyat which Zavvi and Sendit both have, with Zavvi being the cheapest - as shipping is free for you from both of them anyway

Yeah, SavyGamer mention some deals on New Vegas, you might want to give that a try.
Valkyria Chronicles for PS3 is great, if you like anime-style. It has a very unique style and is an original tactical-strategy game. It's not a new one, so you can buy it cheap.

Fallout: New Vegas is also cool. I'd go with the PC version if your hardware can handle it, because for one, it's more easy to control that way, and PC patches come out sooner...and New Vegas badly needs patches.
