After seeing things like LameDuke, the Ultima 9 beta, and the 1997 version of the Witcher, I was wondering, would you like to see betas of games from GOG's catalog included as extras? I would, especially if there's significant differences. I guess I'm sort of a completionist about getting content for games whenever possible, which is why I like that GOG's games come with extras in the first place. I know some of these are impossible to acquire anymore, but they still feel like a part of gaming history.

Give that a lot of publishers don't even seem to be able to find the source code or original assets of the final, released version of their games, I wouldn't be surprised if most of them have long lost those betas forever.

And while it would be interesting I suspect that it would probably cost a lot of time and money to GoG to make those work and maintain them for it to be worth. The best "hope" would be for the publishers themselves and the devs or whoever has those beta agree to release them for free on the Net; but sadly that's highly unlikely.
gog couldn't even do something simpler and include the free shareware episode of RoTT, which is not included into the "full" game.
