Atlantis: The Lost Tales is one of my favourites: Sunriders. Icewind Dale soundtrack is also great.

Alone in the Dark: Inferno (the game may be crappy, but godDAMN the soundtrack was nice!)
King's Bounty series
Knights of Honor
Syberia (I love the main theme)
Tex Murphy: Under a Killing Moon (yeah, not much music here, but I LOVE THE MAIN THEME! I LOVE THAT SAX!)
Wolfenstein 3D. Normally, I'm not into all that old-school stuff (no nostalgia here; I was born in 88), but for some reason these have stuck with me.
Oh wait, I forgot Banjo-Kazooie, Donkey Kong Country and Legend of Zelda

I agree with many of the soundtracks already on here (Mechwarrior 2, Mass Effect, Outcast).
But I didn't notice anyone say Homeworld, which is my #2 of all time (right after Mechwarrior 2). Talk about a dynamic score.
