I was very happy with my Fallout 3 Collector's Edition, complete with metal lunchbox and Vault Boy Bobble-head straight from the game. The artwork book and making of DVD were good too, but I usually only look at those once.

Honestly none of them really rival the Ultima normal editions. Back when I cared though, the one I most prized was probably Neverwinter Nights.

Bioshock 2 - like the little posters from Rapture along with the OST on both cd and record
Halo: Reach - massive ONI/UNSC shipment case along with lots of goodies inside
Warhammer 40,000: Space Marine - like the book look of the case along with the Purity Seal
Fallout 3: Survival edition - Vault Boy bobblehead, lunchbox and replica Pip-boy (but I wish the Pip-Boy was more than just cheap plastic that doesn't close very well)

I have to say I think Resistance 3 (pretty sure) wins for me.
Why?
Because I couldn't give a RATS ASS about the game, and I want the CE for the helmet that's in it. >.>

I would like to mention (the European) Myst IV Limited Collector's Edition, simply because of how bad it is.
32 playing cards and a DVD disc containing 25 minutes of video spread over 5 clips and 9 MP3 tracks from the soundtrack. Oh, and a 2-DVD-cases-thick case that looks like a book - holding the game's DVD case in one side and the abysmal "extras" in the other.
The extras were the only reason I bought Bioshock 2 CE, specifically the vinyl disc containing the first game's soundtrack (the soundtrack to Bs2 is on a CD).

I'm not sure that's entirely accurate. Mine came from Amazon, and I'm pretty sure they don't wander into GAME to buy copies of games, especially as it was about half the price GAME were charging for it in the first place.

The only one (well, two) CE worth mentioning is WoW, but I am sure there are better ones.

Red Orchestra 2 has a Polish Collector's Ed that comes in an ammo box. A freaking ammo box!
