Legend of Kyrandia series. Especially Hand of Fate.

I'm not sure it's easy, per se, but one of the very few adventures I liked (Aside from BG&E) were Gateway I and Gateway II: Homeworld. The same developer made the Spellcasting 101 series, which is pretty much silly PG-rated smut, but the Gateway games were really good, in my opinion. I never felt like the puzzles required something stupid to solve 'em.
