I see there are a few EA games...er....are listed already, or at least developers derived from EA, is there any chance that Warhammer: Dark Omen will ever become available on GOG?

No one here knows (but they can speculate) and GOG will never tell until they are actually ready to release it (assuming they are going to release it). If you want to let GOG know you want it, vote for it on the wishlist: http://www.gog.com/wishlist
