I asked Gods Remastered team about the GOG.com version (currently available on Steam and XO only). They told me that GOG isn't interested. Why?

Isn't God Remastered what GOG was about in its roots? The original one has 370 votes on GOG's wishlist.

If Ihad to guess, I‘d say „game is too niche“.

Another case of GOG caving to the MJLs.
370 isn't exactly a high number.

Also, I thought Gods was a Kusoge, middling at best, trash at worst. As seen here, and on the GameFaqs critic review page.

Most of the reviews for the game were very positive at the time. I personally didn't like it, Speedball 2 and The Chaos Engine are my favourite Bitmap Brothers games.

That's easily explained. Gods was a very good game at its time but the original release was almost 30 years ago.

The remaster only offers some touched up graphics (which you can switch to the original if you want) but otherwise claims to stay faithful to the original. While that might be considered good by fans of the original it also means that the game will have a lot of quirks that were considered normal 30 years ago. After all, game design, control schemes, etc. have improved a lot during that time.

Which means that today there are a lot of similar games that are far superior to Gods. Dust, Ori, Hollow Knight, Sundered, to name but a few from the last years, without even mentioning anything from the last 30 or so years.

If Gods Remastered were sufficiently cheap to cater to the crowd who would like another go at the game because of nostalgia or to the curious young ones who would like to try an old classic that would be fine. But they think they can sell this for €20.

I just can't see how that would sell when all of the above mentioned far superior new games cost the same or less than that.
$19.99 seems way too much. Also the Remastered art style may have been a turn-off for GOG; it reminds me of Age of Barbarian.
Probably because the remaster got rid of the kickin' rad Bisley cover. In all seriousness, it does seem like something that GOG should pick up, but maybe they think the price is a little high? I'm inclined to agree, early '90s PC platformers tend to be a little niche and odd. I do appreciate being able to switch between classic graphics and remastered though, that's always neat.
Maybe the Bitmap Brothers just suck at remakes? Speedball 2 HD isn't rated well here and presumably hasn't sold that well either.

Exactly this.

If you have to blame someone, OP, that is "Curation" department, i believe. They are those who turn down people bringing their game(s) in.

It's not about the price, quality or game popularity for GOG.com to decide. It's my decision to buy the game after all. I'm truly disappointed they decided to refuse the publishing offer. GOG.com database should be as big as possible especially with the provision sale model which would be used in that case.
Maybe create a Community Wishlist for the Remaster? If it does well, GOG might take a second look at the game

This is the most likely reason. 20 bucks for a muddy looking remake is a tad too expensive and GOG knows that.
Wonder Boy: The Dragon's Trap is a god-tier remaster of an old game.
Unfortunately Gods Remastered, at least from the reviews I've read, seems to have a lot of problems and it's also missing the original soundtrack. Also $20 seems excessive.
