I made a GOG account to hopefully get some of my steam games to become DRM free with GOG Connect, but once I linked the two accounts I saw there was no games available.

Most likely in the next big sale. Should be a Spring or Easter sale most likely.

GOG Connect offers have happened 7 times in the last 9 months. There's no predictable pattern - they happen when they happen - although so far they have often been 1 month apart. The previous Connect offer ended on 12 December, so we've been eagerly awaiting something for a while. Hopefully there will be another one coming up soon.

Whenever they post updates on the front page.

Basically what JMich said. I think it's fair to say that GOG Connect is a marketing tactic (not to make it sound bad) to encourage people to visit GOG when a big sale is going on, so there's a greater chance they'll check out the store and spend money here.

My guess: in 1 month from now on.

Games sometimes become available on GOG Connect when GOG has a major sale on, and GOG Connect is used as a promotional tool to draw Steam users to the website, rather than as a tool to just give away games all of the time because someone has them on Steam. :)

Easiest way to find out when games might be available on GOG is to sign up for GOG's email newsletter, or subscribe to their RSS feed, or follow them on Facebook/Twitter/etc. as per your preference. When a new major sale promo happens (usually about 5 or so times per year) there is a chance that some of the publishers might offer free copies of their games on GOG for people that own them on Steam already. There's no guarantee there will be any free games though, it is up to the publishers and whether or not they decide to use GOG's Connect service to promote both themselves and GOG in conjunction with each other.

I read it as "Get the DRM free versions of some of my Steam games".
Which.. well yeah that is what happens.
The Steam games don't become DRM free but he does get DRM free copies.

The BIG "Seasonal" themed sales, with minor sprinkling possibly at any other time.

I always feel like stressing it should probably be valued as a miracle anytime a GOG Connect offer is available.
