(Of course, a remake of 3, with redone game mechanics and remastered music, would be nice, but that would actually take work.)

1 is an unlockable on the ultimate megadrive collection on the ps3 and xbox 360
Sega Genesis Collection for PS2 (which I have) lacks 1, but it does have 2 through 4.
There's also the GBA Phantasy Star Collection, which includes 1 through 3. However, 1 has a broken RNG (as in, it always yields the same result in a given situation, so if an attack misses, all attacks in that situation will miss), 2 and 3 are missing at leas one audio channel, and 3 has a bug that makes certain non-consumable items (basically anything that casts a multi-target spell like GIRES or NASAR) give you extra TP (possibly exceeding your maximum) when used. (I didn't check the consumable that heals the entire party.)

How about 7th Dragon (which I believe was a Sega game) and its sequels?

Now that Sega owns Amplitude Studios, the Endless games would be nice.

Sega Genesis/Mega Drive Collections and Alpha Protocol are the most likely as those are already DRM free...

The Arcade version of Altered Beast as well as Golden Axe. The console ports too. All of them.
An English version of the 2 rentahero games.
Shining Force games as well as Phantasy Star (4 is a classic).
Daytona.
The entire virtua fighter series (as well as last bronx, fighting vipers 1 and 2 and fighters megamix).
ShenMue 1, 2 and Passport.
Dynamite Deka.
Not really Sega, but Guardian Heroes was such a fine Saturn game.
Again, not really Sega, but the Dreamcast port of Soul Calibur is still my favorite in the series.

Sega published the three sequels as well. The third sequel, in particular, was released 5 months after Imageepoch shut down.
