Well according to GOGDB it was only available for a short period both times, and I am sure I received an email about that, so qualifies in my book, even though it wasn't done as a Redeem one.
The Myst Collection bundle was not removed but hidden from the purchase list. Don't worry, it should reappear during some other big sale. In my case it was *removed* at least once before I bought it last winter sale.
Yep, I don't think they ever truly remove stuff from GOG, just hide it as you say ... even older versions of games are likely stored in an archive or three.

So some as you say, have a habit of reappearing, and I am sure GOG are not into doing the structural work more than once.
