I just want to ask if the The Pirate's Fate GOG version is updated like the steam version.

I remember a issue that was fixed in the steam version was that you could not see the romance and endings pictures in gallery after you got them from playing the game in different paths. Is that fixed in GOG or no?

Well the GOG version is on sale and includes the expansion for free.

According to GOG DB, the latest version is 1.0a 2021/06/24. Whether that matches Steam, I cannot say.
