Leroux: Interesting question though: Is there a way to see your store credit without having to go to checkout first?

Leroux: I guess a new option "Store Credit" will appear on the left side menu in that case? Or where will it be displayed? (I currently don't have store credit, so I can't check.)
Whenever you're having any available store credit balance, it will show above your orders list. Of course, if you have more than one balance ( in EUR and USD in your case ), they will show in two boxes separately.
