I might not be looking in the right direction but how do you take screenshots with GOG Galaxy 1.2.6? I can't see any options; folders to save screenshots, re-bind the hotkey...where is it?

If the game supports the overlay just press f-12 when playing... you can't rebind the key yet, but it will probably be added at some point. You can access the screenshot folder by going to the game page -> MORE -> manage installation -> show screenshots. These are stored in the documents via the GOG Galaxy folder.
You don't, the screenshots take you. Galaxy was actually developed using old, leftover soviet code.

Been hitting F12 but I don't see any screenshots being taken, neither is there a folder.

Do I have to enable game overlay?

Yes the Witcher 3 is supported and yes I believe the overlay has to be enabled. Also if you have something like RivaTuner running in the background in may interfere with the overlay.
