I’m trying to figure out if the Mac version of Sanitarium is compatible with Apple’s M chips - it says Mac OS 10.11 but no mention of the processor requirements. Any help with this please?

Probably not by default. Sanitarium is wrapped by ScummVM, which the one that comes with the game is going to be hopelessly out of date. If you use one installed on your system instead, it should work.

It would work in Rosetta 2 even if it wasn't native, but given that the Mac version was added a year ago it's likely to be a recent universal-binary version of ScummVM.
