Other than that there is not much you can do. It’s highly unlikely to see anything from Ubisoft, they dropped some early games here and that was it, all through their client from then on.

GOG is a store, like Steam, but a lot smaller. The main thing going for GOG is the games being DRM-free (at least for single-player).
If they want to sell a game, they first need to get the permission of the owner (publisher) of the game, in case of the AC series, this is Ubisoft.

I'm pretty sure GOG would love to sell the newer AC titles here, but it's up to Ubisoft to sign a deal here. So all you could do is to contact Ubisoft and ask them to sell the games here. Although I doubt this will have much impact, sadly. :-(
Ubisoft isn't going to release the newer AC games here, nor most of their other newer titles, because they are all full to overflowing with Ubisoft store microtransactions.

GOG would (rightfully) demand that they remove that before they sell those games here.

And Ubisoft would demand that GOG require their customers to integrate their GOG account with the Ubisoft client before they sell their games here...so that the games would remain filled with those microtransactions that have to be bought directly from Ubisoft's store.

On top of that, GOG takes a 30% cut just like Steam, and that high cut has caused Ubisoft to stop selling its newest games on Steam over the past couple of years.

So for that reason as well, no way would they add their newer games to GOG...unless in the future Ubisoft decides to backtrack on their decision no longer to give non-Ubisoft distribution stores 30% of their money. But even in that case, the initial microtransaction problems would still remain.
