The release page of the game brings me to the base page of the GOG website and searching GOG for it yields no results. Why is that?

It was removed from sale on all stores in 2023. There is another version of Ticket to Ride that came out on Steam around the same time, but that version hasn't made its way to GOG.

TY. I'm in a process of saying Steam goodbye because I do not like their DRM and online checks. Any idea on how far the new version of the game is on its way to GOG?

I wouldn't hold my breath. But if you're moving away from Steam to avoid scummy practices, you might not want to support these rights holders anyway, since they pulled the old version without providing a way for multiplayer to keep working and instead expect people to re-buy everything in the new version.
