If someone suffers from inconsistent framerate or slowdowns doesn't matter the settings used, it is solved unplugging any generic gamepad or Joystick. Apparently it works fine with 360 gamepads instead.
Weird glitch for a game that is perfectly playable with keyboard and mouse, but strongly intended for gamepad by design

It was pretty unintuitive that I had to unplug my oldie Wingman Extreme Joystick, indeed

My understanding is that aside from the Apple control aspect, the MAC OS is closer to Linux than Windows is.

Not to any degree that matters when it comes to running software. Wine is common and there are many resources for using it to run Windows games. Again: It's "Mac", not an acronym (short for "Macintosh", as in the McIntosh apple variety, misspelled intentionally so as not to conflict with an existing company using that name).
