Star Ores: A New Slope
Says there's a Mac version, but there isn't one on Steam nor are there any Mac builds listed on gogdb. (There is a demo on Steam though.)
Oh, it looks like the younger, uglier brother of "No Man's Sky". :\

GOG is gradually turning into Steam - the number of games being added is increasing, but the quality is declining...

I'm thinking more Space Subnautica. Which strangely, we don't have. But GOG sure does love a good surrogate game.

It’s neither, it is a factory game. Your main goal is to make money and to expand. You start by selling ore, then selling bars. You use the money you earn to buy machines, access higher-level ores, build more advanced equipment, produce mixed goods, set up production lines, and so on.

There is some exploration, since you live on a mine that you need to explore to gather ore, which you then process into different materials. You also need to upgrade your gear to dig deeper and unlock new areas. But at its core, it is a production game.

There are a few that are like that. For example, Breathedge (which is available here on GOG) comes fairly close. But I think the one that is probably the most similar, though, would be Astrometica.
