Is there a way to record games on here? Want to record playing a game, but it's hard with BandiCam as I need to select a gaming screen and I can't do that with my game open as it takes up the entire screen, etc. How would I go about that? Is that allowed with GOG games?
There are a number of applications for recording your screen -or parts of it-, Bandicam being one, OBS is another, I think Nvidia has one in the software package for their hardware. I'm fairly sure such a function isn't built-into Galaxy (yet).

As to how to record the game - some applications allow you to set up a hotkey for starting and stopping a recording, another option is to make the game run in a window, or you could start the recording before launching the game.

Most game publishers are fine with sharing recorded gameplay, though there are those who rather wish you didn't or who set various limits. It's not up to GOG (except in those rare cases they are the publisher).

Yes, it is allowed.

Your options are!

OBS/Streamlabs OBS - i use this daily, quite easy to setup, lets you fiddle with the settings in order to record at the level you want.

Fraps - the classic, easy to use, not too robust however

Nvida Shadowplay - if you have a Nvida card, you'll probably have shadow play (assuming your card isn't old). Simple, direct but not too robust, much like fraps.

All of these will run in the background, but typically it is recommended to try and obtain a second screen in order to keep an eye on your recording progress.

Also, with OBS, you may have a few niggles with certain older games (mostly DOS box) and recording them smoothly, but there's plenty of resources to use online to fix this
If you want to record old games the best solution is to use a recording software with a "screen capture" option. Direct "window capture" most of the time doesn't work and you just end up with a black screen.

If you have a modern computer AMD & Nvidia both have a free software that will works perfectly, otherwise Open Broadcast Software (Free) and Mirillis Action! will also do the trick.
MSI Afterburner can be used too.
if you want something super easy and if you've got windows 10, just push windows+g and use that.

I tried the Windows Gamebar, and my only issue with that is I can't seem to move the recording bar, which makes it a bit hard to play, etc.

If we're taking about video capture what are good codecs to compress the video without losing to much detail or having a video where higher frame rates are important like 60+ fps.

Are there any image analysis tools for gaming to show you only the changes between frames or specific information.

Nvidias was had DRM where you need to go online in order for it to work unless it was fixed.

start a game

press ⊞ + G
click on "Capture"
click on "Start Recording"

or ⊞ + Alt + R
to start recording to folder C:\Users\@username\Videos MP4 File
I use movavi screen recorder. Win 10 recorder makes the game lag.
Since someone went out of their way to unbury this thread, I'll reccomend ShareX as a card flick.

But also a note:

Fraps is Moribund. It last got an update 8 years ago.

I've been using quite a lot apps to record gameplay on my low-end PC: Bandicam, OBS, Streamlabs, Movavi... These are good recorders. But now I found a more lightweight one: TunesKit Screen Recorder. This tool won't occupy too much of my CPU but still record a good 60fps gameplay.
