I accidentally downloaded a game that includes GOG Galaxy. I forgot to choose to use the 'Download Classic Installer'.

My question is, am I able to disable GOG Galaxy on the version I downloaded that includes GOG Galaxy? I don't want the overlay or anything with GOG Galaxy and I was wondering if it's easy to disable/get rid of the GOG Galaxy on a game that includes it?

Yes. When installing, click options and uncheck the "Install Galaxy" checkbox. Said preference should be remembered when running subsequent installers, same as the installation folder.
If you've already installed Galaxy, you can always uninstall it through Control Panel. You may need to create a new desktop shortcut for your game, but you should be able to uninstall Galaxy just fine.
