If your pc can run it, I would highly recommend the Quakespasm source port mod. Changing resolution in unmodded Quake 1 is a bit difficult imo.

Yeah, Quake 1 was made when monitors were big bulky squares, so a source port would be your sane solution.

I'm sure there's some way vanilla Quake 1 can be made to run at such a resolution, but such things are legends whispered not by men.
I wrote a little guide for setting up Quake 1 and 2, you might find it useful. It includes setting up 1920x1080 resolution.

where X:\ is your drive letter eg C:\

so C:\Program Files (x86)\GOG Galaxy\Games\Quake

I can get it all the way up to max resolution in software mode.
