If this has been asked before then I apologise and ask that you point me to the right place. I was wondering if anyone has compiled a list of publishers who release their games on gog and those who don't.

The reason I ask is I often have to decide whether to buy a game on steam or wait and hope that it is released eveentually on gog. If I knew that a publisher releases their games here on gog it would help me to make that choice.
MaGoG search engine can get you most of the way to a list of publishers.

This search for example lists nothing more than the title, developer and publisher of each game on GOG, sorted by publisher.

MaGoG publisher list

Note the following caveats:

1. Publishers with multiple games on GOG are listed multiple times.
2. I've omitted DLC, removed games and bundles from the list
3. Publishers that have joined GOG since 1 November 2019 are not currently included.
4. The same publisher may be listed under a few name variants.

Deep Silver and Focus Home are some of most consistent publishers that release here some time after their launches on Steam/Epic. If i would advise people to wait it would be games by these publishers.

We get the occasional 2K, Bethesda titles too but i would never advocate that people wait for them if they truly want to play them because they are not as reliable.

I think THQNordic are the only relatively big-name publisher who consistently release their games here day-1, though that may change as time goes on. For others a GOG release can range from weeks since the Steam (or other competitor) release, to years, to simply never. Depending on your patience level you could wait and see (unless it's a multiplayer game that could die down as time goes on); certainly not ideal but I don't think there's really anything else you can do (other than contact the developer and publisher and let them know you want a game on GOG).

Often a delayed game will release here at a nice discount at least, like -75-90%.
