Ok After deleting Na man's Sky and GoG Galaxy and all the files in USER/APPDATA/ROAMING/HELLO GAMES
I still had some save data hidden somewhere and when I restarted the game after a fresh install I mysteriously found myself in the same no win poor situation of having a save I suspect was corrupt, so here was my fix to get that data to go bub bye and start new.
It Seems even with a full diligent uninstall you ALSO need to find the folders in the that this sneaky little game made in the internet temp folder. It is a temp folder so I do not know why Hello Games hid them there (Maybe to try and force folks to use same save?)
Turns out in the USER/APPDATA/LOCAL/TEMP is used by Hello Games to store their files for No Man's Sky so that even if you uninstall everything you still find yourself back in your old last save.
I deleted all my temp files in that location (At this point I was only interested in a quick solution to wanting to start over)
A single folder in my case did not delete but it was related to a nvidia related program so I just left it there.
Started No Man;s Sky and BAM new planet and a fresh new start !
For those of you who play games to have fun and not want to start on a world with instantly hostile Sentinels and brutal killing you atmospheric condition with sparse resources this could be what you are looking for. I did this several times as my experience so far with game has been not overly fun but more tedious and I got my dream planet back that actually made me want to take my time and discover everything on it before moving on.
I really hope this give some joy to at least one of you who just wanted a fun relaxing game, plenty of time for the good fight after you have built up a little bit.
Not very nice of Hello Games to do this as it does impact SSD users to have things go a place most would rather not see. I mean the folder is called TEMP, to use date there after a uninstall was not cool IMHO
