I used to play Descent 1 waaay back. It came to me on a 3.5 floppy disk, if you can imagine. As time went on, my PCs improved until I had to connect my Joystick via USB port, at which time the signal became way too slow to play.

Number one; it would seem that Descent 1, 2, 3 are still available, where is the best place to get them?

Number two, I used a joystick (and destroyed 3 hat switches, BTW) is that still the control device of choice? Where can I get what is best to play with today?

It's been a long time since I was in this world, I am not a gamer and don't completely understand the terminology and hardware currently in use. (I'm 73, so type slow and use small words.) :)

Many thanks for any help and tips to get me started back into the game.....

Whatever you prefer! I wouldn't play flying games with mouse+kb, but I'm not everybody. I'd rather play a simple flight game like Descent with a gamepad than with a basic joystick. With the latter, you'd still need the keyboard.
But gamepad vs HOTAS joystick? For Descent? Preference!

Descent series are closer to a FPS than to a traditional flight simulator or even x-wing etc. There are more axis involved in the gameplay, to me a joy is not comfortable or practical enough in these games, the sensibilities and response and axis involved are better managed with a mouse and keyboard combo.

Well, in control options, into the game, by default you can configure all what you want. You can select the mouse/joystick/gamepad and rebind keys, mouse/joystick sensibility etc...
