I'd prefer them to remake 3, and change the whole bloody ending.

Well, since ME3 is still locked to Origin, even on Steam, i think that it is still very unlikely that they will also come to GoG.
Maybe part 1 and 2, but without having the full trilogy, that makes not much sense.

imo GOG would be very foolish to reject Mass Effect 1-2 just because they couldn't bring ME3 also; I think there are lots of people who would like to own ME 1 and 2 here even if they can't get 3 here. (heck I don't think GOG should even reject Andromeda if they think they could be make some decent money off it)
