To me skirmish basically is multiplayer, but against the computer AI. It is a bit like playing multiplayer maps against computer bots in FPS games. If I play a single-player game (be it RTS or FPS, or whatever), I rather play a proper campaign where the missions and maps are designed specifically for the single-player experience, maybe there is a story joining the different missions/levels together (like in Starcraft or Halflife 1-2) etc.
Same for Starcraft and Age of Empires, I've only played their single-player campaigns, several times (and loved it). I think I once tried Starcraft skirmish against the computer, but I didn't like it at all.

Late game though, I didn't see any point in using any infantry units except for the sniper / crazy harry. Infantry units had too few hit points, poor range and speed and really couldn't survive with all the heavy units running around. They were dog meat to static defenses too, veteran status or not. However, for maps where you didn't have a home base, veteran infantry units were vital.
If you were referring to multiplayer games, I'll take back everything I said.
