Sure, if you build it you will be celebrated. No one has built anything like that yet as far as I know. Also, Stylish just handles style sheets, no scripts.
I think it was mentioned in the announcement about the style change of the site, that the custom sort was to be removed because of reasons. (I don't really remember the exact words)

Because GOG wasn't able to to work out a satisfactory solution for manual sorting.

One way to do it, as has been mentioned before is to create a new tag, and then add games to it in the order you want. Then when you show that tag, it will be in your sorted order. A roundabout method, but currently the only way.
