For Clarity, could someone who is able to access the option "apfelnymous" spoke of, post a textual or image based path of settings, to access said option? (a mock up might look like the following: Settings > Notifications > ClientUpdates > ☐Allow_GoG-Galaxy-Client_Updates☑ as a fictional example only)

sam358: Settings > Game features > uncheck "Auto-update games".

Nevermind the "Installing, updating" category right above this one...
I only use Galaxy to download offline installers of games period, not to install them, run them or update them I have unchecked everything and yet Galaxy ignors it and forces games into its "library" and autoupdates them non-the-less. I think the OP wanted to know(and so do I) how do you stop auto update(game updates) besides the conventional method which does not work! Obviously Galaxy has given us fake controls to play with that really do nothing at all.

additonally, reinstalling galaxy does not work either! it behaves exactly the same! unchecking or not! revo only rips out the games themselves which I painstakingly put in(with offline installers) and does not fix Galaxy's ignoring your unchecks in the controls!
