Vanilla Visa doesn't work for overseas purchases. GOG is based in Poland.
There's been a number of threads on the topic in the past.

You should have used a chocolate or strawberry one instead. GOG hates vanilla.

Can you use the gift card through Paypal? Think I did that before... Of course, you'll need a Paypal account.

Well, it started with curiosity if the term would lend itself to a simple picture joke. Should have known it would immediately turn into a full-blown Clarkson-Style I-went-on-the-internet-and-I-found-this routine...
