Some games, just walking and and exploring - think like a Skyrim or modern Fallout from Bethesda - 1st person just suits the game well. Third-person camera in Bethesda RPG's are nice b/c we can basically see what the player looks like. Sometimes, having the option to switch b/t different camera modes can really be helpful, for whatever reason.

If a game has these settings or a config/INI file: turn-off head bob; crank the FOV up; turn off DoF; and turn off motion blur.
Hopefully, that helps.

But, really - more games should have more configurable settings anyways.
I wish more games had multiple camera like 1st person and 3rd person switching like Thief: Deadly Shadows and the some of the Hitman games. But, I'm sure that's a whole lot of work - to make animations and whatnot for both 3rd and 1st person.
