Speaking of guitar instrumentals, Patrick Rondat and Nili Brosh are worth checking out.
I listen to a lot of Bonobo when working/driving. Even when there are lyrics, it's easy to just let them float by, but esp the earlier albums are mostly instrumental.

Animal Magic or Dial M for Monkey are both pretty good places to start.
SomaFM has some quality stuff, old and new - though not all of it instrumental.

My favourite is Groove Salad.
There seems to be also a new one - The Silent Channel - "NEW! Chilled ambient electronic music for calm inner atmospheres from Silent Records."
Vangelis would be my choice.

Which also reminds me - Animals as Leaders - Animals as Leaders is a beautiful instrumental album. The Price of Everything and the Value of Nothing is a personal favourite ^^
I just found this song last night. There are some lyrics but the vast majority of it is instrumental plus you may not be able to hear or understand the lyrics so it might as well be instrumental.
