I don't mind using GOG Galaxy, but I'd at least like it if I could add it as a non-steam game through Steam so it'd show up I'm playing it. I Google'd this but the search results were flooded with "Can I activate this GOG on Steam?"

I already knew how to do this, it's just when I do select The Witcher III, it comes up with a default icon and blank name. Then while that is selected, I press "Add selected programs" and nothing gets added.

When you add the non-Steam game, browse to where the TW3 executable is, under the bin/ subdirectory where you have TW3 installed. witcher3.exe if I recall right. Then you get "witcher3" entry into your Steam game list.

You need to locate Witcher 3 exe, add that and the game will appear on your library. When you'll boot it from your labrary, you will appear in-game and you can take screenshots. Be aware, time played won't be tracked.
