I can't get GOG to respond to my various emails that I have sent them regarding the witcher 3: wild hunt game of the year edition constantly crashing. They responded twice and then never responded again. it's been two days now since there last response. All I want is a refund for a game that keeps crashing despite my system meeting the requirements. How hard is that? steam almost instantly refunds your purchase if there are technical issues but GOG takes forever.

GOG Support do respond on weekend or holidays, but much much slower than work days.
If you still get no response on Monday, open a new ticket or contact GOG staff directly via chat.

I think it's a little unfair to say they take "forever" when it's just two days and the staff gets holidays and weekends off. This isn't like Steam, the games here are all DRM-free. Steam can just remove the game from your account and you can no longer play it, but on GOG, they have no guarantee whatsoever that you didn't keep the installers and are ripping them off, so of course they're going to take more careful measures.
