How do you see when a game came on GOG ? ( And not when the game was published)

Pull up the game in question's page, go to the corresponding changelog and scroll all the way down to an entry aptly titled "Added to database" - et voila.

But that only shows when it was added to GOG-DB. Not GOG. There are no entries older than 2018.

Not sure why that information would be relevant? Some games are removed, then put back or replaced by other versions etc. Which date would you then want?

I usually just query a search engine for something like:
release [game name] site:gog.com/news
For most games that have been out for years before coming to GOG (especially "classic" releases), you can usually expect reviews to have been posted on a given store page the day of the GOG release, so sorting the reviews there by "most recent", then going to the last page will give you a pretty good idea of when the game first came here.
