Hedgewars and Teeworlds are awsome. Both are "easy to learn hard to master" with some online skill level very freaking high, but fun none the less. They're that kind of game that makes you're friends drink a couple more beers and let'sa go to next round.

+1 to Battle for Wesnoth, it's been mentioned before several times and for a good reason. Base game has content to probably 100+ hours and the mod comunity is gigantic, note that most mods don't require more than a single click to get, everything is handled by the game itself. The game core function is to manipulate "RNG" to work at your favor, placing the units on vantageous terrain.
If you like 500h campaigns, check Legends of the Invincibles.
If you want to have a "rogue-like" experience I can recomend online (can be played single player) map called Colosseum, your are thrown into a arena to battle hordes of enemies (you can play with 1-6 units), each round you can make your units stronger, choose new attacks etc, call it "RPG-elements" if you want.
It's probably the game I played the most, ever...

ToME also known as Tales of Taj Mahal (sorry but had to make the joke) started as a free open source project and it's still available, or as a graphic upgraded paid version.

Nice thread. Added this to favourites. I didn't even know that Cortex Command was now open source, and this were great news to me, because I love that game, and was kind of disappointed that it was never finished... :)
Though it's on opensource remakes list mentioned above I'd like to pick up Daggerfall Unity (Open Daggerfall).
Game is in beta stage now. That means that is fully playable, but waiting for final polishing and receiving tiny bug fixes.

And there is also list of mods on Nexus mods.
I'm about to crush ya.

The already listed OS Game Clones is dedicated to searching for and cataloguing the status of Open Source "clone" games.

The LibreGameWiki tracks free games in a wiki format, including many libre titles.

This is a github post dedicated to tracking the github gaming projects.

And this is a more or less sister to OS Game Clones, tracking instead just open source games.

Two that I've played a bit of recently:

CivClicker: Imagine if Civilization were an idle clicker. (Well, this game is a bit less idle due to occasional random invasions, but the idea is still the same.)

A Dark Room: An interesting mix of genres. It looks like some text adventure at first, but then turns into an idle clicker (except that random events mean you can't be too idle here), and later expands into a couple other genres.

(Both are web-based games that happen to be open source.)
Widelands is a great Settlers inspired game.

Darvond: Daggerfall Unity is a standalone product.
Standalone, but it requires original game files to run. Since this game is freeware it's not problem to download them. For example directly from Bethesda pages.
No mention of the Civilization-clone FreeCiv yet? For shame!

Assaultcube is a another great one. CS clone with some great editing features. That's another staple of my LAN basement that I just finishing pulling apart.
