I had added some EUR to gog wallet when i was in Germany, but now i have moved out of EU and am unable to use the fund in the wallet as it is defaulting to USD,
I probably wont be going back to Europe for at least a couple of years.

Have you changed the currency into euro on the bottom of the front page of the store ?

Checked that, I don't see a EUR option there, Just USD :(

The FAQ says it's regional dependent so if you can't do it there, best bet as suggested would be a support ticket and ask them how they want to handle it.

Yeah, I'd say contact support. They might be able to convert it to USD wallet funds for you.
