Hexen (1995), although apparently MIDI is often preferred since the CD audio doesn't cover the full soundtrack: https://forum.zdoom.org/viewtopic.php?f=4&t=53265

Adding Quake, Quake II, Outlaws and X-Wing Vs Tie Fighter

Not sure about Duke Nukem 3D. I remember playing it while listening to Metallica, but can't remember if I was doing it in-game or through my CD player.

Edit: Just noticed you specified early '90s. All the titles I listed are mid to late '90s. Leaving my post unaltered just in case the info is useful to someone else.

Sam & Max: Hit the Road was early '90s and used Redbook.

A few titles that jump out as I look over my big-box collection:

X-Wing Collector Series and TIE Fighter Collector Series
These are referred to as "Special Edition" here on GOG. Some people also refer to these as X-Wing 95 / TIE95. These are the versions of the games which run natively under Windows 95. However, they are different from the "X-Wing Collector's CD-ROM" and "TIE Fighter Collector's CD-ROM". Despite having very similar names, the "Collector's CD-ROM" version are DOS programs and do not contain Red Book music tracks.

TheDudeLebowski also mentioned X-Wing vs. TIE Fighter -- all versions of that game include Red Book audio. X-Wing Alliance did not include Red Book audio -- it went back to using dynamically generated iMuse soundtracks.

MechWarrior 2: 31st Century Combat, MechWarrior 2: Ghost Bear's Legacy and MechWarrior 2: Mercenaries
Some versions of these games (particularly hybrid versions that contained both the DOS and Windows versions on one disc) significantly cropped and/or re-ordered the Red Book audio tracks since there was more data on the CD (and less room for music tracks). If you want to ensure you get the full soundtrack, look for the DOS-only versions of these games.

PCGamingWiki has a list of games that use Red Book CD audio:

https://www.pcgamingwiki.com/wiki/List_of_games_that_use_Red_Book_CD_audio

Edit:

I just remembered that MobyGames has an attribute for Audio CD Tracks

Yeah I started going through those lists, thanks. Can't find all of them though and some like Manhole seem to not have it until the New and Enhanced version.

Oh thanks, I had counted those out based on the collector's editions.

Edit: I can't seem to find cd audio versions on youtube though?

I found this but both the '95 and '98 ones sound like mt-32:

Yeah, everything on Youtube seems to be the MIDI version. However, the Red Book tracks from the '95 editions didn't actually have any unique music as I recall -- it was just a collection of pieces from the official Star Wars movie soundtracks.

The whole trilogy was originally released in German with CD Redbook audio. Though I have heard that some of the games in some language versions only have MIDI music.

But I do have all the German versions on CD and I have just checked to make sure my memory doesn't play tricks on me and can confirm with certainty that all three (Blade of Destiny, Star Trail and Shadow over Riva) do have CD audio.

It's by the way very easily proven by searching for the German titles on a free CD database.

I know Descent 2 did.

and

Little Big Adventure

Little Big Adventure 2 (also called Twinsen's Odyssey)

And I just read that you wanted to focus on pre 1995 games. Sigh.

Duke Nukem 3D - Atomic Edition/Plutonium Edition Upgrade disc had a single redbook audio track of the main theme. It was a bonus and not used by the game.
