GOGdb lists neither Demon Stone nor Dragonshard as having had a recent update.

SNEG is responsible for publishing on Steam, and are the ones that did the updates.

It may come here eventually, but by the looks of it the updates to the Gold box classics have not reached GOG yet.

All information on updates comes from GOGdb. I may be corrected by those having the relevant games on GOG.
uhm, when i watched just now Dragonshard, as did Dragonsphere, Dragon Age Origins and Heroes Chronicles 4, Clash of the Dragons all had a blue dot

changelog indicates an update done on 14 november 2024 for DragonShard

My mistake then
I thought these re-releases on steam were just modded versions of the originals. I don't know if they can update the GOG versions because the publisher is different. I thought if they want they must re-release them as separate entries but then the originals may get removed

That message can be found on both games' store pages.

And the Steam changelogs, that Hirako__ linked to, mention re-releases of these games.

Edit:
There are alternative versions of the games available, under their "Extras", of which I'm pretty sure, weren't there, when I downloaded the latest updates.

Oh wow they added them just in time! Yes these are the updated versions from Steam! And they added them as separate entries which is great!

I can see on gogdb for both games offline installers with SNEG mentioned in the version. For Galaxy you have to use the beta channels to get the updates (same place from where you donwgrade games with Galaxy). This is also mentioned on the both games store pages + the changelogs (and make sure to backup your saves!)
