Hi there.

I just bought Doom and Doom 2 to enjoy on my legacy windows XP system, which I cannot connect to the internet for a multitude of reasons. Since GOG games are DRM free, my plan was to just download the winXP versions of the games to my Mac and transfer them by way of a flashdrive. However, my Mac GOG client refuses to let me download the games because they are incompatible with OSX. How do I get around this?

By downloading the offline backup installers through the library:

Hah! I also made a picture like that and keep it on my desktop ready just for when people come ask about this.

Just a word of warning: GOG does not officially support Windows XP anymore and some new installers outright break compatibility with XP. Bypassing that is not impossible but a bit tricky. No clue about these games as I do not have them.

It also works using the Galaxy Client, click on the game, click on More and select Backup and Goodies. Theres a tab to select an OS, choose whatever you like and there should be a download available.

EDIT: The tab is only there for multi-platform titles, if its just on Windows then there is just a windows backup download being shown. Works as well though.
