I've been loving using GOG Galaxy and I like that, like Steam, it tracks your game playtime under the "My Activity" tab when you view your installed games.

I was wondering - if you uninstall a game, will your GOG account remember your playtime? If you uninstall and then re-install, will the playtime return?

I suppose it's a silly detail, but I like the idea that I can always track how long it took me to play/beat a game.

Yeah, it'll still be there.
That type of information is stored on GoG's servers.
So yes, it should remember your play time.
I played some game it didn't count shit.

I'm certain it works, as I've done so many times myself. ;)
You can even get to the page and see your playtime when the game isn't installed at all.

Yes, you can even see your playtime when the game isn't installed. I've attached two pictures as proof. I stopped playing King Dugan's Dungeon about a month ago (because I finished it), so Galaxy has been restarted numerous times.

Also, as you can see, if you reinstall a game, it saves the date on which you last launched it, so it will be there as if nothing ever happened. That's pretty cool!
