I find the UI process a bit unclear.
I click on the e-mail link and get to a page saying:

"Enter your code below to redeem your game or discount. It will be added to "(name)" account. "

So, it implies you can redeem a game or, as here, a discount. So the discount will somehow be added to my account.

I click on continue and see games ticked at a slightly deeper discount than in the store, a I checked manually.

"You are about to redeem 3 items. They will be added to "(name)" account and appear in your library. You can only use this code once."

The button for it says "Redeem". What would happen if I clicked that?
What it should do it add discount opportunities for those games to my account, maybe update the store with the new discount level, but it is not entirely clear since it shows prices there and looks like it could possibly trigger a purchase.

Yes, once you redeem a discount code, those items go into your basket ready for purchase. The code is one use only, so once you click redeem you have to use it then, if you remove anything from the basket the code is void. It does not apply anything to the store, only that one purchase.

The wording is such to make it clear discount codes cannot be used to buy games as a gift.

Does GOG store credit cards + code? (I don't know, I always use paypal)

I use it too rarely, too.
One could assume that of course the payment step would have to be confirmed for each purchase, but that's not good enough. There is such a thing as on-click payment convenience features for some services, after all.

The discount code is personal (only applies to the registered account) and only considered redeemed once the payment process is complete as far as I know. I often times click the link in the email on multiple different occasions which takes me to the redeem code page. The code is always valid thus reinforcing that it is not truly redeemed until the payment process is complete. I really don't find any of the wording confusing truthfully. As for one click payments...I don't think GoG allows this...and for good reason.....it aids in fraudulent purchases and chargeback thus allowing the purchaser to keep the DRM free content anyway.

I wish. What it appears to do today is create a new cart, distinct from any cart you might already have, which new cart cannot have (regularly priced) items added to it. Such a pain to perform two transactions: one for the discount code items and one for the other items.
