Backers have received emails about the release tomorrow. yeah! I'm curious about the specifics and the generality behind this statement:

"If you want a GoG key instead of a Steam key (or switch your Steam Early Access key for a GoG key), please contact our support"

how does a "switch" work? Can the devs actually remove keys from your account?

If they can (regardless of how its done), what happens to achievements/trading cards? Can you still buy cards for that badge? Do you lose points gained from crafting badges for that game in the past?

Note that "Switch" is in addition to "instead" meaning they aren't intending to let anyone have both as I understand it. So I'm curious how this works both from a technical and logistical viewpoint.

Keys can be revoked by the developers/publishers/store, though it's not done that often. Most known cases are keys bought with stolen credit cards or with the buyer issuing a chargeback through his bank. But cases like the one you are saying are possible as well, and a better case for doing so.

Nothing. You still have the achievements (think of it like playing the game during a free weekend) and trading cards are also left intact. Unsure if buying the game again allows you to gain more cards, though I doubt it.

Yes. Cards can be gained with multiple ways, owning the game is one of them.

No. Crafting a badge doesn't require you owning the game.
